Major hospitals around the world and national coeliac organisations post lots of useful information online. If you read them extensively you will discover differing opinions about some aspects of a gluten free diet.

Dieticians organisations: I read "Dieticians of Canada" which is a brilliant site.

Gluten free testing: Gluten Free Watchdog (based in the U.S. ) gives you the latest news online and on twitter.
